chore(tui): drop the overrides block npm never applied

npm honours overrides only in the root package.json, so ui-tui's ink-text-input > ink alias never
took effect: the lockfile resolves ink-text-input's ink peer to the upstream ink 7.1.1. Removing it
changes nothing that is installed, and pnpm ignores workspace overrides the same way.
