Maciej Lisiewski e3085ec023 fix(deps): bump undici to 6.29.1 and 7.30.1 ...

Moves the ui-tui direct pin and the root undici@^6/@^7 overrides, plus
the photon sidecar's direct pin and override, to the patched releases
in each line. Both were published 2026-10-15, past the 14-day npm
release-age gate.
