This updates the platforms package to be an alias for the new platforms module.
This helps transitioning consumers to the new module, and makes sure that
containerd v2 and v1 use the same definitions.

This commit removes the following gogoproto extensions;
- gogoproto.nullable
- gogoproto.customename
- gogoproto.unmarshaller_all
- gogoproto.stringer_all
- gogoproto.sizer_all
- gogoproto.marshaler_all
- gogoproto.goproto_unregonized_all
- gogoproto.goproto_stringer_all
- gogoproto.goproto_getters_all
None of them are supported by Google's toolchain (see #6564).

`Ctr` interface follows the pattern `ctr <command> <subcommand>` except
for the `plugins` command which does not have subcommands. This feels
unnatural to certain users and they would expect that they can list
containerd plugins via `ctr plugins list`.
This commit implements their expectation so that `plugins` becomes a
command "group" and its `list` subcommand actually lists the plugins.
